Balti is a curry originating in an area now in Northern Pakistan. Balti refers both to this area of origin and the dish in which the food is cooked and served. The Balti pan is a wok-like, heavy, cast iron dish. Balti food is typically very aromatic, but not excessively hot. This highly fragrant blend makes a wonderful marinade when mixed with a little oil or yoghurt, or it can be used in a curry with coconut milk, stock or tomatoes, adding yoghurt if desired.
