Masala is the word used for ‘blend’ and Garam means ‘spices’. It is the staple Indian spice mix. There are as many versions as there are villages and every family has their own recipe. This is an aromatic variety that can be used in many ways: from tomato based meat or poultry dishes to samosas and Indian breads. For an even more intense and rich flavour, gently dry roast the ingredients before use. We even use this as part of our famous Butter Chicken. It includes: coriander, pepper, cloves, cassia, cinnamon, fennel, cardamom brown and green, nigella, ajwain.
