Baharat is the name given to most Arab and Middle Eastern spice blends, which simply means “spices”. Like India’s Masala, it is used in many different dishes and comes in as many variations as there are regions. Baharat is a full-bodied blend that can be used unreservedly with lamb, chicken and, in smaller amounts, with seafood. Add a little oil to make a great rub or marinade for frying and roasting, or add a couple of teaspoons to onions and garlic as a stunning base for a casserole. It includes: pepper, coriander, paprika, cardamom, cinnamon, cumin, nutmeg, cloves and ginger.
